Why does Matroska carry 'more than one' of everything?

MKV stands for Matroska, and this container was built on a design philosophy of keeping everything in a single file. Older containers such as MOV or AVI were fundamentally conceived around one video and one audio stream, whereas Matroska was designed from the outset as a multi-track structure.

The practical consequence is this: a single .mkv file in your hands can hold all of the following at once:

  • One video track

  • Multiple subtitle tracks
  • Chapter markers, cover art, metadata

This explains why one film file can be watched both with its original audio and dubbed. There are not two separate files; there are two separate audio streams inside a single file, and the player decides which one to play.

So what does that mean when you extract MP3?

This is exactly the point where MKV genuinely separates itself from other containers as far as audio extraction is concerned.

When you extract audio from a MOV file, the question of "which audio" mostly never arises, because there is only one track inside. In an MKV file that question becomes central: if the container carries three audio tracks, which one gets turned into MP3?

The answer rests on a piece of information stored in the container. Matroska can assign flags to each track, and the most important of these is the default flag. This flag means "use this track if no preference is stated". When a player opens the file it looks at that flag first; conversion tools follow the same logic.

There is also a forced flag, used mostly with subtitles — for cases such as short scenes spoken in a foreign language whose subtitles should be shown even if the user has not asked for subtitles.

Why do you get a different language when you take the same film from a different source?

Because the flags are set by whoever, or whatever software, prepared the file. One source may have marked the Turkish dub as default, another the original language. There is no central rule in the container that makes one of these "correct"; every file carries the preference of whoever assembled it.

What that means is this: you cannot guarantee the language of the MP3 you extract in advance. The most practical thing to do is to listen to the first thirty seconds after you download the result. That short check completely prevents the situation of filing something away and noticing months later that it is the wrong language.

The tracks can also differ in codec

A little-known detail of the multi-track structure: tracks do not have to be in the same codec. In one MKV file the original audio may be a high-bitrate DTS track while the Turkish dub is a more modest AC3 or AAC track. Even the channel counts can differ — one 5.1, the other stereo.

This directly affects the quality of your MP3 result. If you extract different tracks from the same file, you can end up with two MP3s of visibly different quality. The source track's own bitrate and channel structure set the ceiling for the MP3 output.

Is lossless copying possible?

We have to be honest here, because MKV is an interesting case on this point.

If the selected audio track is already compressed with the MP3 codec, pulling that data out of the container and writing it into a .mp3 file is pure copying. No re-encoding takes place, the audio stays bit-for-bit identical, and quality loss is zero. This really does come up in some MKV files repackaged from older sources.

But finding MP3 inside an MKV is the exception. The codecs you will see far more often are AAC, AC3 and DTS. None of these can be placed inside an MP3 file as they are, because a .mp3 file by definition carries only data encoded with the MP3 codec. Turning these tracks into MP3 is therefore necessarily a re-encode: the audio is decoded first, then compressed again from scratch with the MP3 algorithm.

Some quality loss is unavoidable in that process. The reason is that AC3, DTS and AAC are all lossy formats, and each of them discards different information according to its own model when compressing. The MP3 encoder receives audio that has already been thinned out and applies its own thinning on top. The two losses do not cancel each other out, they accumulate.

The way to minimise the loss is to choose a sensible bitrate: 128–192 kbps for speech-heavy content, 256 kbps and above for music and rich audio. But this holds in all circumstances — conversion cannot make audio better than its source.

Coming down from multichannel to stereo

One last concept. The AC3 and DTS tracks in film MKVs are frequently 5.1 channel. MP3 is in practice a stereo format, so when those tracks are converted to MP3 the channels are folded down to two.

This fold-down works without technical problems but it changes the character: dialogue from the centre channel and effects from the rear channels now combine into the same two channels. In some films this can make the dialogue sound slightly more buried among the effects and music. That is not a conversion fault, it is the natural consequence of reducing the channel count.
